The fight that you have seen with the Enderman with the bombs is actually a mod do make the dragon more exciting with more attacks. Also I believe it is intended to have the Dragon go through block so it encourages you to fight since you cant hide. And a sword will hit the dragon, but they tend to miss because of the short range.

I think you still need to learn how to deal with Enderman. You just aim for the feet. If you look at them anywhere else, they will teleport away from you. Alternatively, you could've used your Water Bucket and if they teleport near you, they'll get hurt by the water and lose agro.
At this point in the game you should've had access to Potions and Enchantments. You could've used Strength Potions and Sharpness Diamond swords and Power Bows.
Also, sorry to disappoint but Notch doesn't work on Minecraft anymore. I think mainly jeb_ and Dinnerbone work on the new updates now.
